Recipe For Traditional Cuban Pork roasted over and open BBQ pit
1) Lay down a thick bed of charcoal and then suspend the whole pig above the fire, on a metal grate.
2) Cover with some banana leaves keep all the delicious juices inside.
3) Put some sheet metal around the pit to focus the heat.
And that’s it! In about 5 hours you have a fully cooked and beautifully tender roasted pig.
